Taking the freedom to experiment with winemaking technique, he has crafted a cabernet that is distinctly his own. Using intensive heat control to carefully finesse the tannins and acidities has left a wine with superb balance and poise, weight and richness. Pius has had very little press coverage so far - just one critical review (below). 95 Points "Very dark in the glass, this showers the nose with complex aromas of dark cocoa, black olive, peppercorn, tar, espresso and mint. There's a creamy and focused cassis kick to the sip, but it's the slightly bitter coffee and charred earth aspects that are most compelling." Matt Kettmann from Wine Enthusiast.
