Description
Fabbrica takes a refreshingly unfussy approach to winemaking: modern equipment, but very little intervention. Based in Pienza in southern Tuscany, the estate allows the fruit and fermentation to develop at their own pace, with natural yeasts, spontaneous fermentation, whole bunches and gentle punch-downs forming the foundations of the cellar philosophy. Winemaker Tim Manning brings experience from Oregon, New Zealand and Tuscany, combining a light touch with plenty of hands-on attention.
The Toscana Bianco is a textured, characterful white with a freshness that keeps its richer elements beautifully balanced. Expect ripe orchard and stone fruit alongside citrus, floral notes and a subtle savoury complexity. There is an appealing mineral quality too, with the wine showing both generosity and energy rather than simply chasing weight.
Longer skin contact and gentle extraction add depth and texture, while fermentation and élevage in a combination of concrete, wood and other traditional vessels allow the wine to develop without excessive oak influence. The result is a distinctive Tuscan white with plenty of personality — fresh, quietly complex and shaped as much by its winemaking philosophy as by the grapes themselves.
Fabbrica’s approach is perhaps best summed up by its belief in knowing when not to intervene: observe, guide and let the wine find its own path.
